Barbecue is as natural to the citizens of North Carolina as breathing. While we may argue whether Eastern style is better than Lexington, and whether North Carolina barbecue trumps Memphis, the simple truth is the process to make barbecue is an essential part of the culture. The best place to find superb, traditionally made barbecue is the annual sale held by Boy Scout Troop 33. Each year, this event is held on the Friday and Saturday of Super Bowl weekend, but the process begins much earlier. Scouts cut all the necessary hickory wood, and the pits are tended for several days. Go early: They usually sell out.
